Scoop soy yogurt over the cheesecloth, then wrap it in a tight bundle and tie with a rubber band. Let the yogurt drain in the fridge for 16-24 hours, or until it reaches desired consistency. The longer you let it stand, the thicker it gets. Remove the cheese from the cheesecloth into a bowl, add salt and anything else you like, and mix well. Enjoy!
